Plantain and egg frittata can be made on a stovetop or baked in the oven, both methods are not complex at all, and you may want to follow the same procedure till the end Plantain and egg frittata is what I came up with this morning, this is one of the most delicious breakfast ideas in West Africa, most especially in Nigeria and it is perfect for both kids and adults and is also an ideal make-ahead-meal. If you dont have plan of preparing something very complicated in the morning, plantain and egg frittata is the best breakfast idea for you. This is what we call the Nigerian pizza because it comes out exactly like it.

Basically to make plantain and egg frittata, you will need ripe plantain, eggs and sausage/bacon or cheese. Ripe plantain is best used in this recipe than the unripe, you can also replace the plantain with potatoes if you think they are too sweet for you to make the potato version (potato frittata).

If you don’t like to fry your plantain, you can bake it as it is the healthier alternative. Very soon I will be posting the baked method of plantain and egg frittata, watch out for it. For the ingredients, you can add any of your traditional spice, it will still work, but be sure to go easy with salt. This meal doesn’t take much time just in less than one hour you are done with it.

Ingredients for Plantain Frittata

  • 2-3 large sized ripe plantain
  • 4 small sized sausages, cut into round shape
  • 5 eggs, whisked
  • 3 medium tomatoes, diced
  • 2 red bell peppers, cut into strips
  • 2 green bell peppers, cut into long strips
  • 1 medium onion, chopped
  • 3 cloves of garlic, crushed
  • 1 stock cube
  • teaspoon curry powder
  • teaspoon thyme
  • Olive oil for frying
  • A sprinkle of cayenne pepper

A pinch of salt to taste

Steps on How to MakePlantain and Egg Frittata

  1. Peel and dice plantain into desire shape and size, sprinkle it with a pinch of salt and toast.
  2. Heat oil in a pan and fry the plantain until they are golden or brown; drain from the oil and set aside.
  3. Place an empty pan on a stove, add about 2 tablespoons of cooking oil to it, add onions and garlic and saut for 1 minute.
  4. Add sausage and stir fry for few minutes, followed with the bell peppers.
  5. Season with curry, thyme, dry pepper, 1 stock cube and a pinch of salt to taste. Beat eggs in another bowl, transfer the content in the frying pan into the egg.
  6. Place an empty pan on the stove, spray with cooking spray or melted butter to coat the inside of the pan.
  7. Pour the egg mixture or the filling into the coated pan and level it. Arrange the fried plantain round the pan until it takes the shape of the pan.
  8. Add few bell pepper strips for a pop of colour, cover the lid and cook on low heat for 20 minutes until it begins to set and cake nicely.
  9. Take it off heat once it has set.
  10. Your plantain and egg frittata is ready for breakfast.
