Cooking sweet potatoes can be very fast, this can be prepared using different methods; you can bake sweet potatoes in the oven, grilled them over BBQ fire or cook them in the microwave. A simple way to cook sweet potatoes is to make a sweet porridge with them which is very easy and delicious too. Sweet potatoes are very versatile vegetables, they are cheap and are packed with nutrients like vitamin A, B vitamins and fibre and they are absolutely delicious. You can decide to bake them, fry them into sweet potato chips, combine it with beans to make potato and beans porridge or steam them to pair with vegetable sauce. Another great way enjoy sweet potatoes is to serve them as a side dish with tomato egg sauce; this is my favourite combinations so far.

Sweet potato porridge is just too simple and delicious to enjoy as breakfast, lunch or dinner; making sweet potatoes into porridge (pottage) is one of the great ways to intensify the sweetness of these veggies; this makes them surprisingly satisfying with just few seasonings. If you crave something rich and savory, you can tryout this delicious potato porridge and you will love the taste so well.

The above picture shows a tasty sweet potato porridge made with fish into well-seasoned tomato sauce. I made use of tomatoes (tomato mix) and vegetable oil instead of the usual palm oil used in our popular Asaro (yam porridge), but you can substitute the tomato sauce with palm oil if you prefer that. However instead making the sauce from scratch, you can use your already prepared tomato stew to make this potato porridge. Different species of potatoes such as yellow, white and the purple potatoes work for this recipe; feel free to use what you have at hand, I used the white potatoes.

Ingredients for cooking potato porridge

  1. 5 medium sweet potatoes
  2. 1 medium fish (mackerel or salmon)
  3. 5 medium tomatoes
  4. 3 red bell peppers
  5. 2 scotch bonnet peppers
  6. 2 tablespoon ground crayfish
  7. 2 stock cubes
  8. 1 medium ginger
  9. 1 cup chopped spring onion, ugu or spinach
  10. 1 medium onion
  11. 1-teaspoon turmeric powder
  12. 1-teaspoon thyme
  13. cup of peanut oil

Steps on how to cook sweet potatoes (porridge)

  1. Peel sweet potatoes and diceinto medium sizes, rinse with clean water and place ina pot.
  2. Add water to slightly cover the potatoes and place on heat to cook for 15 minutes.
  3. While potatoes is cooking, blend tomatoes with peppers, chop onion, spring onion and set aside.
  4. Season and cook fish to extract some rich stock, take out the middle bones and shred the fish with a fork and set aside.
  5. Once the sweet potatoes are cooked, drain from the liquid and set aside, add peanut oil to a wide pot and place on heat.
  6. Add chopped onions and ginger to the oil and fry for 30 seconds or until fragrant.
  7. Add the blended tomatoes to the oil and cook for 10 minutes for the liquid to reduce.
  8. Season the tomato sauce with turmeric powder, stock cubes, salt, thyme and pepper if you need more. Cook until the sauce starts to thicken.
  9. Bring the boiled potatoes to the sauce and stir properly, add the shredded fish and the spring onion/spinach and stir well to incorporate. Leave the porridge to cook on low heat for 5 minutes. Take it off heat and serve it warm or as you desire.

8. Season the tomato sauce with turmeric powder, stock cubes, salt, thyme and pepper if you need more. Cook until the sauce starts to thicken.

9. Bring the boiled potatoes to the sauce and stir properly, add the shredded fish and the spring onion/spinach and stir well to incorporate. Leave the porridge to cook on low heat for 5 minutes. Take it off heat and serve it warm or as you desire.
