Ingredients for coconut fried rice
- 6 pieces of fried/baked chicken breast,
- 2 medium matured coconut flesh, blended
- 3 cups of uncooked rice
- 1 tablespoon of coconut powder
- 4 scotch bonnet peppers (or as desired)
- 3 stock cubes
- 2-Tablespoon curry powder
- 2-tablespoon thymes
- 3 medium carrots, chopped
- 160g of sweet corn
- 2 medium green bell peppers, chopped
- 3 medium red bell peppers, chopped
- cup green peas
Steps on how to cook coconut fried rice
- Crack open coconut and take out the flesh, blend or grate the coconut into a smooth paste.
- Add 2 cups of lukewarm water to the blended coconut, mix to extract the milk and then set aside.
- In a medium pot, combine coconut milk, coconut powder, pepper, onions, stock cubes, thyme, curry, salt and stir.
- Add a little of the chicken stock and place the content on heat to boil.
- Once the content starts to boil, rinse the uncooked rice under running water, add into the content, and stir.
- Cook the rice for 20 minutes and if the water dries while the rice is still hard, add more coconut milk into it and continue cooking.
- In another pan, add coconut oil or cooking oil; once it sizzles, add onions and garlic stir-fry for 30 seconds.
- Add in carrots, green peas, bell peppers and stir-fry for 3 minutes, season the veggies with curry, thyme, 1 stock cube and salt and cook for 2 minutes on medium heat.
- Add the sweet corn and stir-fry for 3 minutes, taste for salt and adjust if need be.
- At this point, the coconut rice must have cooked through and the water has evaporated.
- Scoop some of the fried vegetable into a bowl, and scoop some of the coconut rice into the pan containing the veggies and stir fry in the veggies for 3 minutes or until every grain of rice is heated and you could perceive the scented flavour of the coconut rice.
