Designer rice is a very simple and delicious rice cooked with ofada stew (ayamese), ofada stew or ayamase on the other hand is a tasty green bell peppers sauce used for eating boiled rice. Generally, ofada stew goes well with any types of rice including boiled yam and plantain, you can use the stew to prepare a one pot rice just the way I did or serve as a side dish. This designer rice is one of my best rice recipes; the simplest way to make this is to prepare it like jollof rice. Designer rice is best prepared with plenty meat, in this case you will be having a meaty plate of rice which means for every spoon you will get to chew one or two pieces of meat.
After making this ofada rice (designer rice), I used some green and red peppers to design it, this gives the rice a beautiful and better presentation which is what you are seeing above and the taste is something else. You can take out some of the listed ingredients or more to your taste.

Ingredients for designer rice
- 1 kg of beef/chicken
- 3 red bell peppers
- 8 green bell peppers
- 3 scotch bonnets
- 2 stock cubes
- 2 medium onions
- 2 tablespoon ground crayfish
- 1 tablespoons Iru (locust beans)
- 1 cup of palm oil
- 3 cups of parboiled rice
- Salt to taste
Directions for making designer rice
- Season meat properly and cook until its tender, drain the meat from the stock and set aside
- Roughly, blend green peppers, scotch bonnets, onions, and rain out excess water using a colander.
- Chop red and green peppers into thin strips and one extra onion and set aside for later use.
- Place an empty pot on heat; add palm oil to it to bleach for 5-10 minutes with the lid closed.
- Add the cooked meat to the oil and fry the meat until golden, remove from the oil and set aside.
- Add chopped onions to the oil and fry for 30 seconds followed with the roughly blended pepper.
- Add Iru to the pepper sauce, stir-fry for 2 minutes until the pepper turns soft and season with crayfish, stock cubes, salt and stir to combine.
- Add the beef stock to the sauce and stir in the parboiled rice to incorporate, add more water if the meat stock is not enough for the rice to cook.
- Cover the lid and leave the rice to cook for 20 minutes until the water dries completely.
- Once the liquid has dried, return the fried beef and stir in the chopped peppers and mix to combine. Leave the rice to cook for five minutes on low heat for the pepper to be heat.
- Designer rice is ready, you can enjoy as it is or pair it with fried plantain.
