I do these a lot especially if I use a manual blender to blend my tomatoes. Which means I dont have to add water to the tomatoes to blend and all I just need to do is to drain the excess liquid that comes with the tomatoes for a while.
- Use spices like ginger, onions and garlic in your chicken stew, these add additional flavor and yumminess to the stew apart from the chicken stock, but you have to use them in small quantities especially the ginger spice so that it doesnt overwhelm the flavor of the chicken.

- 1 kg of frozen chicken
- 12 medium size plum tomatoes
- 2 medium onions
- 6 large size red bell peppers
- 4 scotch bonnets or habanero peppers
- 1 cup of vegetable oil
- 1 medium fresh ginger
- 3 cloves of garlic
- 3 seasoning cubes
- 2 tablespoons of mix chicken spices
- 1-tablespoon thyme
- 1-tablespoon curry powder
- cup of chicken broth
- Salt to taste

- Combine tomato, peppers, ginger and bell peppers and blend into a smooth puree.
- Boil the tomato mix until the water dries completely and set aside.
- Season the chicken with onions, garlic, ginger, salt curry, thyme and chicken spices.
- Cook the chicken until done and separate from the stock and set aside.
- Bake the chicken or heat up oil in a pan and fry your chicken until it is golden.
- Reduce the oil you have used to fry the chicken to about 1 cup and place it back on heat.
- Add chopped onions, grated ginger and garlic to the oil and fry for 2 minutes or until fragrant.
- Add the tomato puree to it and stir- fry for about 10 minutes or until the oil forms bubbles and rises to the top. At this time, the sour taste must have reduced also.
- Add some seasoning cubes, thyme, curry and other spices and stir to combine.
