  • 1 head of broccoli
  • 1/4 tsp of smoked paprika powder
  • 1/2 tsp of black pepper powder
  • 1/4 tsp of grated nutmeg
  • 1 tsp of salt
  • 1 large sliced carrot
  • 2 cups of half and half cream
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of all-purpose flour
  • 1/3 cup of chopped onions
  • 3 minced garlic cloves
  • 4 tbsp of unsalted butter
  • 2 and 1/2 cups of vegetable stock; you can substitute the vegetable stock with water and then add 1 bouillon cube to the water.

How to Make Broccoli Cheddar Soup

  • Chop the broccoli with a knife into small sizes

You can now add vegetable stock or water. If you add water, then you need to add 1 bouillon cube to the cheese soup; but if you are using vegetable stock, no need of adding a bouillon cube.
  • Now, add the carrots and broccoli florets

Now, add the carrots and broccoli florets as well as seasonings: salt, paprika, nutmeg, and black pepper powder. Stir to combine and bring to a boil for 15 minutes until the carrots and broccoli are cooked.
  • Next, add the cream and shredded cheddar cheese. Stir to combine and further simmer for about 3 minutes on medium heat.
