Tiger nut milk is a natural sweetened milk gotten from tiger nuts, this refreshing milk drink serves as a diary free alternative to cow milk, hence it is a good substitute for lactose intolerance. Other names for tiger nut milk is ofio and aya milk. This milk contains high amount of fibre, it is rich in calcium potassium, magnesium and fat, even children can enjoy it. There are different ways to enjoy tiger nuts, you can chew them as they are (both the dried and fresh tiger nuts), roast them as or use as a substitute for cow milk. In Nigeria, tiger nuts are used for kunu aya and it is one of the nutritious and popular drinks in the North.

Tiger nut milk has a mild sweet taste and a creamy nutty flavour, you can enjoy it without having to add sugar or any sweetener and it is pretty simple to make, the procedures for making this is quite similar to soy milk, almond milk, coconut milk.

There are two ways of making tiger nut milk; you can use the dried tiger nuts or the fresh tiger nuts. If using the dried tiger nut, You will have to pre-soak them for 24 hours or more to soften the nuts. Soaking them first makes ithem soft and easy for blender to spin.

For the above tiger nut milk recipe, I used the fresh tiger nuts, however, there was no need to pre-soak the nuts since they are soft and easy to blend like that. Tiger nut milk is naturally sweet, however, if you still feel like sweetening this, you can add a little sugar, honey after blending or you can add few pieces of date palm to it to blend.

  1. 1-2 cups of tiger nuts
  2. A strainer or cheese cloth
  3. 2 cups of water or just enough to blend the nuts
  4. Sweetener (honey, sugar, dates)

Step on how to make tiger nut milk

  1. Measure dried tiger nuts into a bowl of water, let the water cover the nuts fully
  2. Place a towel or lid over the soaked tiger nut, let it rest over night
  3. Rinse the tiger nuts from the water and place in a blender
  4. Add water to the blender and pulse until you have a smooth barter
  5. Place a cheese cloth or a fine strainer over a bowl and pour the blended paste on it; press out the milk with your hand.
  6. Add some sweetener if you must and pour the tiger nut milk into a mason jar and chill in the fridge.
  7. Tiger nut milk may coagulate in the fridge, make sure you shake the jar before you drink
