  • 4 large tomatoes, diced
  • 1 small onion, chopped
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • 3 garlic cloves, minced
  • 1 stock cube
  • 2 scotch bonnets, chopped or dry pepper

  1. Rinse and dice fresh tomatoes nicely into cubes. Chop onions, peppers nicely and set aside in different bowls.
  2. Place a pan on heat, add -cup of peanut oil to it and let it get hot for few minutes.
  3. Add the onions and minced garlic to it, fry while stirring until fragrant.
  4. Add the diced tomatoes, pepper to the oil and cook for 5 minutes until they are soft.
  5. Season the stew with 1 stock cube, curry, thyme, salt and stir to incorporate. Cook until the oil floats at the top.
  6. Break eggs into a bowl, add a pinch of salt and whisk for few seconds, spread the beaten egg circularly over the stew and leave it to set for 2 minutes without stirring. Gently break the egg into chunks with a slotted spoon after it has becomes solidified and scrape the pan. Off the heat and let the residual heat cook the remaining.
