Palm oil sauce/stew is just another way of making delicious Nigerian fried stew using palm oil instead of the regular vegetable oil. This palm oil pepper sauce is very tasty just like buka stew; buka stew is made with bleached palm oil while this is made without bleaching the oil. This sauce can be made with or without fish, but I chose to add fish because of the taste it adds to the sauce. This sauce is best prepared with very few and common ingredients to maintain the authentic aroma.
This palm oil pepper sauce is one of the simplest pepper sauce/stew recipes that doesnt require much ingredients and it is commonly made majorly with peppers, however, I choose to add few pieces of tomatoes since Im not really a fan of pepper. Palm oil pepper sauce is versatile, it can be paired with boiled yam, roasted plantain, fried yam chips, or potatoes. You can as well watch the video above on how to make palm oil pepper sauce.

Palm oil sauce ingredients
- 1 cup palm oil
- 4 bell peppers
- 2 medium tomatoes
- 2 scotch bonnet peppers
- 1 medium onion
- 1 small ginger
- 2 cloves of garlic
- 2 stock cubes
- A pinch of salt
Steps on how to prepare palm oil pepper sauce
- Rinse peppers and tomatoes with clean water and take out some of the seeds if you dont like it very spicy.
- Blend the peppers into a chunky consistency, shred fish, mince the garlic and crush ginger and set all aside
- Place an empty pan on stove, add a cup of palm oil to it and leave to melt.
- Once the oil has melted, add ginger, garlic and onions and stir fry for 1 minute.
- Add the blended pepper mix into the oil and cook for 10 minutes while stirring
- Season it with seasoning cubes, salt and taste. Add the shredded fish and stir to incorporate.
- Cook the pepper sauce for 3 three minutes on low heat and take it off after that
- You can serve this pepper sauce with fried yam or plantain.
