Oil less okra soup is a very simple, plain and green soup prepared without palm oil, it is tasty and just like any other vegetable soup. If you have been looking for a healthy way to cook okra soup, this very okra soup recipe is for you, palm oil is not added to it and you will still get the best taste.
In this oil less okra soup, I used goat meat, dried fish and fresh mackerel, other things like crab, shrimp and fresh fish could be added too if you have them handy; feel free to use your preferred meat to make this. You can even skip the goat meat and use only fish to cook this soup if that is what you love.
I love okra soup with uziza, the flavour and the heat this leaf add to the soup makes it even more unique; you might want to use ugu or spinach, they still work for this soup.
Oil less okra soup, is the one soup I never like while growing up, there is nothing you will give to convince me to eat okra soup, not even the one without palm oil. But today, eat everything, provided it is nutritious and not harmful and as a foodie, I try out different recipes, both familiar and new, and all I can say is I love food and will always want to cook unfamiliar food anytime any day. Oil less okra soup ingredients
- 4 cups of chopped okra
- 1kg goat meat
- 1 medium mackerel
- 3 medium catfish
- cup ground crayfish
- 1 medium onion
- 4 stock cubes
- A handful of uziza leaves
- 3 scotch bonnet or cayenne pepper
- Salt to taste
Steps on how to make oil less okra soup
- Wash goat meat into a medium pot, season with 2 stock cubes, onion, pepper and salt.
- Add water and place the meat on heat to cook, this might take up to 20 minutes to become soft
- While the meat is cooking, chop okra and uziza leaves , blend crayfish and debone the catfish and set all aside.
- when the meat is half way done, add the mackerel and the dried fish to it and cook until it is properly soft.
- Once you are sure the fish is cooked, Remove from the boiling stock to prevent it from crumbling when stirring, add the chopped okra, and stir
- Season the soup with crayfish, more stock cubes, pepper, stir and taste for salt. You can add a little water just enough for the quantity of okra you preparing , that is if the stock has reduced.
- Add the shredded uziza leaves, return the boiled fish to the soup and stir it properly to incorporate.
- Taste for salt and leave the soup to simmer on low heat for 5 minutes or until the okra is slightly soft.
- Your oil less okra soup is ready, serve as it is or with your favourite swallow.
