Couscous which is sometimes pronounced as cuz cuz is an easy healthy breakfast recipe that can be served with steamed vegetables or stew especially when it is prepared white. Making couscous is as easy as preparing any other breakfast recipe, couscous food is healthy and easy meal and it is good for any one. Some people prepare their couscous meal with just salt, but you can still add some rich spices to your couscous meal and still keep it simple, however, there are many ways to make couscous tasty; you can add some vegetables for extra taste and flavour or cook your couscous with chicken broth or beef stock. If you dont have already prepared meat broth at home, you can simply use chicken stock cube to cook your couscous, it gives it a perfect taste and aroma.
One thing to note while making couscous is that you dont add your dried couscous to cold water to cook, the water must boil first before you add it. Additionally, the quantity couscous to the ratio of water also matters. Like you already know that couscous is an instant grain which doesnt require much water, you should be able to minimise the quantity of water you add to make this food, this means that you are only to steam it for few minutes and not too cook it for too long. In this case, you need 1-cup of water to 1 cup of couscous but you can replace water with rich stock.
After cooking couscous, it will become dense, but dont panic, you just need to fluff it with a fork by scrapping the surface and breaking every lump to achieve light and fluffy couscous. Couscous ingredients
- 1 cup of dry couscous
- 1 medium smoked fish/chicken, shredded
- 5 medium tomatoes chopped
- One medium onion, chopped
- 3 medium carrots, chopped
- 2 scotch bonnets, blended
- 1 small ginger, blended
- 2 seasoning cubes
- 21 large stick of spring onion, chopped
- Curry and thyme, 1 teaspoon each
- Salt to taste
Directions on how to cook stir fried vegetable couscous
- Add 1 cup of water to a pot and place on heat, add salt and 1 seasoning cube to the water.
- Once the water has started boiling, add couscous to it, cover and let it soak up the liquid.
- After 3-5 minutes, the liquid must have dried, take the couscous off heat and set aside.
- Place another pan on heat add 3 tablespoons of cooking oil to it; add ginger and onions to fry for 30 seconds.
- Add the chopped tomato and pepper; stir fry for 5-10 minutes until it turns soft.
- Add in the chopped carrots and the smoked fish/chicken and let it cook for 5 minutes on medium heat, season the sauce with thyme, curry,1 stock cube and stir to incorporate.
- Stir in the cooked couscous and mix properly to coat with the sauce, add the chopped spring onions and stir. Let the couscous cook for 3 minutes more while stirring.
- Stir fried couscous is ready, take it off heat and serve while it is still warm.
Directions on how to make stir fry vegetable couscous
1. Add 1 cup of water to a pot and place on heat, add salt and 1 seasoning cube to the water. Once the water has started boiling, add the couscous to it cover and let it soak upthe liquid.
2. The tiny granules of couscous need time to soften. Make sure your pot remains covered to capture the steam from the hot water.
3. After 3 minutes, the liquid must have dried, take the couscous off heat and set aside.

5. Add the chopped tomato and pepper; stir fry for 5-10 minutes until it turns soft.
6. Add in the chopped carrots and the smoked fish/chicken and let it cook for 5 minutes onmedium heat, season the sauce with thyme, curry, 1 stock cube and stir to incorporate.
