- Always make use of dry rice: Left over rice is ideal for shrimp fried rice, but if you are using freshly cooked rice, strain it properly or dry it in the oven so that you dont end up with excess liquid in the pan while frying the rice and other vegetables.
- Do all the frying on medium heat: You dont really need much high heat for this process, medium heat ensure all the rice grains are fried and are heated evenly.

- cup of green beans
- 4 tablespoons of peanut oil (or sesame oil)

- 1 medium ginger, grated
- 3 cloves of garlic, minced

- Sprinkle the shrimp with a pinch of salt, pepper and leave to sit for 5 minutes.
- Place a non-stick pan or wok on a medium heat, add 1 tablespoon of peanut oil to it.
- Add shrimp and stir-fry for 30 seconds, flip over and cook the side facing up until it is slightly pink, but dont overcook it, about 80% cooked.
