Puff puff snack is an easy Nigerian street food commonly sold by the street alongside with akara, yam chips and plantain chips. It is very easy to prepare with just few common ingredients hence you can include this snack to your food menu to be enjoyed during any time of the day.

This easy snack is so spongy, sweet and fluffy just like this simpledoughnut. Some people also pronounce puff puff as kpuff kpuff and it is called panke in Hausa. When making your puff, you can decide to add a little ground pepper or milk to it, but this depends on your taste, but I like to keep my puff puff recipe very simple by just sticking to few ingredients which is what I used for the above snack.

Even though it is termed street food, many people still make puff puff at home especially for simple parties like birthday, naming ceremony and also to entertain quests at weddings during receptions. Simple ingredients are needed for making puff puff. You can substitute baking powder for yeast if you prefer that and you can still make your puff puff without yeast. I made the above puff puff without my hand having a direct contact with the barter (making puff puff without touching it), however, you can make yours using your bare hands. Puff Puff Ingredients

  1. 250g all-purpose flour
  2. 80g conventional sugar (or granulated sugar)
  3. 1 teaspoon ground nutmeg
  4. 2 teaspoons instant yeast
  5. A pinch of salt
  6. 1 litre of cooking oil for frying
  7. 200ml of lukewarm water for mixing

Directions for making puff puff

  1. Sift flour into a medium bowl; add sugar, nutmeg, yeast and salt and mix to combine.
  2. Add lukewarm water to the flour little at a time and with a spatula or wooden turner
  3. Add more water to the flour and mix very well until the barter is lump free and moderately runny but not watery (thicker than pan cake barter).
  4. Wrap the barter with a napkin or aluminum foil and seal up the edges of the bowl with your hands.
  5. Keep in a warm place for 45minutes- 1 hour and dont allow any space for air.
  6. Unwrap the barter; you will notice it has doubled the initial quantity with some tiny bubbles at the top. Deflate the barter.
  7. Heat up oil in a pan at least 3 inches deep for the puff puff. Taste the oil to know if it is hot enough by dropping a little barter into it, if it sizzles and floats to the top, it means the oil is hot enough, if doesnt wait for it to get hot so that you will get a perfect rounded puff puff.
  8. Use a medium scoop like a plastic spoon to scoop the barter into the hot oil, fry the puff puff in batches and do not over crowd your pan.
  9. Use a fork to gently flip the puff puff once one side is golden and the let the other side gets the same color.
  10. Take the puff puff out of the oil with a big frying spoon once they are all golden and drain on a kitchen napkin.
  11. Leave puff to cool completely before serving. Enjoy your sweet yummy puff puff snacks with a chill drink.

4. Wrap the barter with a napkin or aluminum foil and seal up the edges of the bowl with your hands.

10. Take the puff puff out of the oil with a big frying spoon once they are all golden and drain in a kitchen napkin.
