You will definitely want to add this to your menu after trying it out because it is very delicious and rich. However, you can simply call this dish chicken potato porridge with mixed vegetables. It was what I have been thinking about in my mindfor days before finally bringing it to reality. This curried potato porridge taste is completely different from the normal Nigerian Irish potato porridge made with palm oil and spinach (ugwu) and fish.

Instead of using chicken for this potato porridge, you can choose to use turkey, beef or fish, the use of chicken was my own choice of meat in this potatoes recipe. In addition, you can use unripe plantain to cook a similar meal like this and if you want, you can combine plantain and potato to make this delicious delicacy (potato and plantain porridge) as well.
This easy chicken and curried potato dish is extremely tender and delicious, plus the addition of fresh varieties of vegetables and spices which givethe potatoes extra flavour and tastiness; the potatoes where equally cooked in chicken broth, but you can simply use water if you dont have meat broth and season it to your own taste. Sweet potatoes can be used in place of Irish potatoes as well.

Chicken and curried potato porridge ingredients
- 10-12 white potatoes (Irish potatoes)
- 500g chicken breast
- 3 medium carrots, chopped
- 2 green bell peppers, chopped
- 3 red bell peppers, chopped
- cup green peas
- 3 green chillies, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced,
- 1 small ginger, mashed
- 1-teaspoon turmeric powder
- 1-teaspoon curry powder
- 2 tablespoons ground crayfish
- 2 seasoning cubes, crushed
Procedures for cooking chicken and curried potato porridge
- Season chicken with enough spices to get a rich flavour and cook until it becomes tender.
- Add about 1 cup of water to it to extract enough broth for the potato porridge.
- Separate the chicken from the broth once it is cooked, pull the chicken from the bones with a fork and keep aside.
- Peel potatoes, rinse and cut them into medium size cubes and keep aside.
- Place the chicken broth on the stove, add a little water to increase the quantity and bring to a boil.
- Bring the potatoes into the pot on stove and cook for 5 minutes.
- Season the potato with 1 seasoning stock cube, onions, turmeric powder, curry powder, crayfish and cook it until it becomes soft.
- If the potato looks a bit watery to you, remove 3 of the potatoes and mash them into a paste and add it back to thicken the porridge or simple dissolve 2 tablespoons of plain flour and add into the porridge to thicken it perfectly.
- Place a dried pan on heat, add 4 tablespoons of vegetable oil to it, stir in onions, ginger and garlic and fry for 2 minutes, add in the bell peppers, green chilli peppers, carrots and green peas into the oil and stir fry for 5 minutes on a low heat.
- Season the vegetable with salt and stir to mix, add in the shredded chicken into the pan and cook with the vegies for 5 minutes more.
- Pour the vegetable into the cooked potatoes and stir with a spatula to combine properly.
- Cook the potato on a medium for about 3 minutes, put off heat.
- Serve your delicious chicken curried potato porridge warm.
