Today, I will be showing you the easy way of baking chicken leg quarters. It has fewer calories, more spices, and is juicy. My recipe for chicken leg quarters uses simple ingredients that ensure tasty and yummy oven baked chicken quarters.

What are chicken leg quarters?
Chicken leg quarter is a cut-out single part of the chicken that includes the thigh, drumstick, and part of the back of the chicken attached to it. Because these parts together formed a quarter of the chicken when cut out, it is therefore called Chicken leg Quarter.
Ingredients
- 4 pieces of chicken leg quarters
- 1 tbsp of butter
- 3 tbsp of olive oil
- 1/2 tbsp of onion powder
- 1/2 tsp of garlic powder
- 1/2 tsp of black pepper powder
- 1/2 tsp of red chili pepper powder
- 1/4 tsp of salt
- 1 bouillon cube – crushed. This adds more taste to the baked chicken quarters.
- 1 tsp of dried oregano
- 1 tsp of dried thyme
- 1 tsp of dried parsley
- 1 tbsp of smoked paprika powder
- 1 tbsp of Adobo seasoning mix.
Baking chicken leg quarters in the oven
- Make the seasoning mix for marinating the chicken quarters.
- In a small mixing bowl, add all the dried spices and seasonings: onion powder, garlic powder, black pepper powder, red chili pepper powder, salt, dried oregano, dried thyme, dried parsley, smoked paprika powder, Adobo seasoning mix, and crushed bouillon cube. Stir the seasonings to combine.
- Make about 3 incisions on each of the chicken leg quarters to the bone, using a knife.
- In a large bowl containing the chicken quarters, drizzle 1 and 1/2 tbsp of olive oil over the chicken quarters. Use your gloved hands to rub the oil to go round the whole chicken parts. The oil helps to stick the seasonings to the chicken when the marinade is applied.
- Rub the seasoning mixture (marinade) over the chicken quarters and ensure the seasoning mix gets into the incised parts of the chicken.
- Cover the bowl with cling film and marinate the chicken quarters overnight or at least for 3 hours. The more time for marinating the chicken, the better the taste and flavor it develops.
- After marinating it, line them in your casserole pan or any baking pan. Melt about 1 tbsp of butter and drizzle over the chicken. Butter helps improve the flavor of the oven baked chicken leg quarters recipe. Instead of olive oil, you can use melted butter in the entire process.
- Now bake the chicken quarters in the oven at a temperature of 350 degrees Fahrenheit for 45 to 50 minutes.
- Halfway into the baking process, you can flip the chicken quarters to the other side to ensure even baking.
