Ingredients

Beef and Broccoli Ingredients

  • 1 head Broccoli (cut into small florets)
  • 550 grams Beef steak - You can use sirloin steak, skirt, or flank steak. They cook faster and are the best cuts for the beef and broccoli stir fry.
  • 1 tsp Sesame Seeds - for garnishing

Ingredients for Beef and Broccoli Sauce

  • 4 tbsp Dark Soy Sauce
  • 2 tbsp Oyster Sauce
  • 1 tsp Brown Sugar
  • 1 tbsp Cornstarch
  • ¼ tsp Salt

Ingredients for the Beef Marinade

  • ½ tsp Baking soda
  • ¼ tsp Black pepper powder
  • 1 tsp cornstarch
  • 1 tbsp Light Soy Sauce
  • 2 tbsp Shaoxing rice wine
  • 1 tbsp Sesame oil or Canola oil

Ingredients for Beef and Broccoli stir fry

  • 1 tbsp Spring Onions - chopped
  • ¼ tsp Red Chili Flakes - optional. You can add this if you need some heat in the beef with broccoli recipe.
  • 2 tbsp Vegetable oil
  • 1 whole Onion - cut into thin slices.
  • 1 tsp grated Ginger
  • ½ tsp minced Garlic

Instructions

Marinating the steak for the beef and broccoli stir fry

  • Wash and clean the beef properly before cutting it into long strips. This makes it easier to cook when stir-frying it.

  • Marinate the beef with 1 tbsp of light soy sauce, 2 tbsp of Shaoxing rice wine, and 1 tsp of Sesame oil.

  • Also, add ¼ tsp of Black pepper powder, 1 tsp of cornstarch, and ½ tsp of baking soda. If you are going to be marinading overnight, do not add baking soda to the beef. Only add the baking soda about 10 minutes prior to stir-frying of the marinated beef.
    To the marinade, add baking soda, cornstarch, and black pepper powder
  • Stir all the ingredients for the beef-marinade together to combine and keep aside. If you prefer making the beef and broccoli marinade overnight, keep it in the fridge.

Steaming the Broccoli

  • Cut the broccoli into smaller florets and make sure it is properly rinsed with clean water. Transfer the broccoli florets into a steamer basket

  • Add water to a pot and bring the water to a boil. Make sure the steamer basket can be place in the pot and the level of the water should be below the bottom of the steamer basket. That way, the steam from the water can cook the broccoli properly. We are using steam because it cooks the broccoli and maintains the vibrant green color and nutrients of the broccoli.

  • Season the broccoli with a pinch of salt and then cover and allow to steam for about 3 minutes.

Making the Beef and Broccoli Sauce

  • Add 4 tbsp of dark soy sauce, 2 tbsp of oyster sauce, and 1 tsp of brown sugar to a mixing bowl.
    Add 4 tbsp of dark soy sauce to a mixing bowl. Also, add 2 tbsp of oyster sauce, 1 tsp of brown sugar, 1 tbsp of cornstarch, and 1/2 cup of water.
  • Also, add 1 tbsp of cornstarch and ½ cup of water.

  • Stir to combine and set the beef and broccoli sauce aside.

  • Remember to come back to the broccoli that is steaming. Remove it and run it over cold water to prevent further cooking by the heat. Then set it aside too.

Making the Beef and Broccoli Stir fry

  • Place a pan on the stovetop and add 2 tbsp of vegetable oil to it; once the oil is heated, add the sliced onions and stir fry for 3 minutes until the onions are translucent.

  • Add the grated ginger and minced garlic and stir fry for 30 seconds until fragrant

  • Now, bring the marinated beef and stir fry for 4 minutes on one side and then turn over to the other site and stir fry for another 4 minutes until the beef is soft, tender, and moist.

  • Next, stir the beef and broccoli sauce again and pour it over the stir fried beef. Stir the sauce to combine with the beef and reduce the heat to medium-low and cook for 4 minutes until the sauce begins to thicken.

  • You can add some red chili flakes for some heat to this beef and broccoli stir fry. Stir to combine.

  • Now, add the steamed broccoli florets and some chopped spring onions, and then stir to combine. If the beef and broccoli sauce appears to be too thick, you reduce the consistent with some little amount of water and cook for few seconds or a minute.

  • After stirring, further cook for a minute and your easy homemade beef and broccoli is ready.

Keeping Beef and Broccoli Marinade Overnight

The best option for tasty beef and broccoli is to keep it overnight. Beef and broccoli overnight marinade should be kept in the fridge and not a freezer. It gives more time for the marinade to be absorbed by the beef making your beef and broccoli tasty and delicious. If you are keeping it overnight, do not add the baking soda to it, simply add the baking soda about 10 minutes prior to stir frying the marinated beef. That way, the meat will not be over tenderized by the baking soda.
Coating the beef with cornstarch, baking soda, and rice wine makes a tender beef and broccoli because the coating prevents the release of moisture from the beef making it moist while the wine and baking soda make it tender. This process is called Velvetting and it is the secret Chinese technique of making the meat tender and moist when stir fried.
