How to Make Nigerian Egg Roll Recipe

The Nigerian egg roll is a very popular pastry snack made with flour and hard-boiled eggs. This is usually prepared by wrapping hard-boiled eggs in the seasoned dough. The dough is then deep-frying in hot oil to form a crunchy outer layer. Making Nigerian egg rolls is similar to making scotch eggs; in the case of scotch eggs, sausage meat is used for wrapping the eggs while you need a soft dough to wrap the eggs in the egg rolls recipe.

The process of making egg rolls is quite easy and simple to follow provided you know the right quantity of flour to used and how to wrap your egg rolls. If the eggs are properly wrapped with the right quantity of dough, you will end up with the perfect Nigerian egg roll. However, if they are not properly encircled in the dough, they can easily pop out or may have some cracks during the frying process.

Ingredients for making egg roll

  • 6 large eggs
  • 1 and 1/2 cups of all-purpose flour
  • 1/2 teaspoon nutmeg
  • 3 tablespoons sugar
  • A teaspoon of baking powder
  • 1 large egg for mixing the dough
  • 1/2 cup of milk or  8 teaspoons water
  • 2 tablespoons margarine
  • 1/4 teaspoon salt

Steps on How to Make Nigerian Egg Rolls

  1. Add eggs to a saucepan with water and bring to a boil, let the eggs cook for 5 minutes.
  2. Once the eggs have boiled, turn off the heat and let them sit in the hot water for 12 minutes.
  3. Transfer the oil eggs to ice-cold water and let them cool completely before peeling. After that, peel the eggs and pat them dried on a paper towel, and set aside.
  4. Sift your flour into a medium bowl, add all the dried ingredients such as sugar, baking powder, nutmeg, salt, and whisk to combine.
  5. Add in butter and 1 egg and mix until it is crumbly; make a well in the middle and gradually add in milk and begin to knead until a dough is formed.
  6. At first, the dough will appear sticky, you can add a little flour to it; as you keep kneading, it will begin to blend and smoothen out.
  7. When you have achieved a smooth dough, cover the dough with plastic wrap or a towel, and leave it to rest for 15 minutes.

How to wrap your egg rolls

  1. After 15 minutes the dough will become soft and pliable; knead again for 30 seconds. Divide the dough evenly into the number of eggs, you are using. Smoothen each tiny ball and flatten it out with your palms to form a coin.
  2. Dust each side of the dough with flour to prevent it from sticking. Place one egg in the middle and gradually wrap the dough over the eggs; continue this until the egg is completely encircled in the dough.
  3. Roll it into a smooth rounded ball and set aside; repeat this with the remaining doughs and eggs.
  4. Heat up enough oil in a pot and begin frying your egg rolls a few at a time; turning them over to have and even color.
  5. Drain the egg rolls on a paper towel till they are completely cooled down.
  6. Your Nigerian egg rolls are ready, enjoy them right away as they are or with a soft drink.
